1½ Tbsp. Big Y pure olive oil, divided

¼ cup quinoa

¾ cup water

1 Tbsp. fresh lemon juice

½ Tbsp. white balsamic vinegar

-kosher salt and fresh ground pepper to taste

1 Tbsp. fresh parsley, chopped

1 cup yellow and red grape tomatoes, halved

½ cup canned Big Y garbanzo beans, drained and rinsed

2 Tbsp. walnuts

½ small avocado, peeled, pitted and sliced

½ Tbsp. sesame seeds

DIRECTIONS

In a small saucepan over medium heat, add Ā½ tablespoon oil. Once hot, add quinoa and toast for 2 minutes, stirring frequently. Add water, increase heat to medium-high and bring to a boil. Once boiling, reduce heat to low, cover and let cook for 20 minutes or until quinoa is tender, adding more water as needed. Remove from heat and fluff with a fork; let cool. In a small bowl, whisk together remaining oil, lemon juice, vinegar and salt and pepper to taste. Place cooled quinoa in a large bowl; drizzle oil mixture over top. Arrange parsley, tomatoes, garbanzo beans, walnuts, avocado and sesame seeds on top of quinoa and enjoy.
