Add All Ingredients

1 lb. ground lamb

½ cup Big Y plain breadcrumbs

1/3 cup crumbled feta cheese

1 Big Y egg

2 garlic cloves, minced

2 Tbsp. red wine vinegar

2 Tbsp. fresh mint leaves, chopped

¼ tsp. Crushed Red Pepper

-sea salt and fresh ground pepper to taste

2 Tbsp. Big Y pure olive oil

1 lemon, sliced

1 Tbsp. balsamic vinegar

½ Tbsp. parsley, minced

1 cup grape tomatoes, halved

2 Tbsp. red onion, minced

¼ cup red cabbage, shredded

-pita chips


In a medium bowl, combine lamb, breadcrumbs, feta, egg, garlic, vinegar, mint, red pepper and salt and pepper to taste. Form mixture into 2-inch meatballs. In a large skillet over medium heat, add oil. Once hot, add meatballs and cook for 2 minutes per side or until nicely browned. Reduce heat to low, cover and cook for 4 minutes or until lamb is cooked through and no longer pink in the middle). Remove from heat and keep warm. Return skillet to medium heat and add lemon slices. Cook for 3 minutes per side or until just browned. In a small bowl, combine lime juice, vinegar, parsley, tomatoes, onions and salt and pepper to taste. Arrange 4 meatballs (save others for another use), cabbage, lemon slices, tomato mixture and pita chips in a large bowl and enjoy.
