2 tsp. Big Y pure olive oil

½ cup onion, chopped

1 lb. ground beef

3 garlic cloves, finely chopped

1 red bell pepper, seeded and chopped

1½ tsp. dried basil

1 tsp. dried oregano

½ tsp. Big Y paprika

-Big Y salt and black pepper to taste

1 10¾-oz. can tomato soup

1 14-oz. can fire roasted diced tomatoes

1¼ cups reduced sodium beef broth

8 oz. elbow macaroni

DIRECTIONS

In a large stockpot over medium heat, add oil. Once hot, add onions and cook for 3 minutes. Add ground beef and cook for 8 minutes or until no longer pink and cooked through; drain and return to stove. Add garlic, bell pepper, oregano, basil, paprika and salt and pepper to taste. Cook for 4 minutes or until peppers start to soften. Add tomato soup, diced tomatoes and broth; bring mixture to a low boil. Stir in pasta, cover, reduce heat and cook for 17 minutes or until the liquid has absorbed and pasta is al dente.
