¼ cup Big Y extra-virgin olive oil

2 Tbsp. fresh lemon juice

-zest of ½ a lemon

1½ Tbsp. Big Y Dijon mustard

½ tsp. Big Y honey

1 garlic clove, minced

4 fresh basil leaves, minced

-kosher salt and fresh ground pepper to taste

6 cups Little Leaf Farms baby spring mix

1½ cups grape tomatoes, halved

1/3 cup banana peppers, sliced

½ small red onion, sliced into rings

1 cup kalamata olives

½ cup feta cheese, cubed

DIRECTIONS

Using a blender, combine olive oil, lemon juice, lemon zest, mustard, honey, garlic, basil and salt and pepper to taste. Blend for 1 minute or until well combined; set aside. In a large serving bowl, combine spring mix, tomatoes, peppers, onion, olives and feta. Add half the dressing and toss to coat well. Serve salad with remaining dressing on the side.
