Add All Ingredients

2 tbsp olive oil

1 medium onion, diced

3 garlic cloves, minced

1 cup carrots, sliced

1 cup celery, chopped

2 tsp. Italian seasoning

-sea salt and fresh black pepper to taste

2 14.5-oz. cans fire-roasted tomatoes

1 15-oz. can tomato sauce

5 cups low sodium vegetable broth

2 15-oz. cans white beans, drained and rinsed

1 cup parsley tops


In a large soup pot over medium heat, add oil. Once hot, add onion, garlic, carrots and celery; stir and cook for 5 minutes. Add Italian seasoning and salt and pepper to taste; cook for 3 minutes. Add tomatoes, tomato sauce and broth and bring to a low boil. Reduce heat, cover and cook for 15 minutes. Add beans and salt and pepper to taste and cook for 10 minutes. Serve soup topped with parsley.
