½ cup Big Y mayonnaise

3 Tbsp. fresh chives

1 Tbsp. fresh lemon juice

1½ Tbsp. Big Y Dijon mustard

1 tsp. Creole seasoning

1 Tbsp. water

1 stick Big Y unsalted butter, cut into small pieces

1 lb. lobster meat (about 4 tails), de-shelled

1½ ground chuck

2½ tsp. seafood seasoning

-Big Y black pepper to taste

-Big Y no-stick cooking spray

4 hamburger rolls

DIRECTIONS

In a small bowl. combine mayonnaise, chives, lemon juice, mustard, lemon zest and Creole seasoning; cover and refrigerate until ready to use. In a small saucepan, add water and bring to a boil; reduce to a simmer. Whisk in butter, a little at a time, allowing butter to melt before adding more, making sure butter does not boil. Once all of the butter has melted, add lobster meat and cook over low heat for 7-10 minutes or until it’s cooked-through, making sure butter doesn’t boil. Remove lobster meat from pan and cut into chunks; reserve and keep warm. In a medium bowl, combine beef, seafood seasoning and pepper; shape into 4 patties. Coat grill grate with cooking spray and preheat to medium-high. Add burger patties, turn heat to medium and grill, covered, for 5-7 minutes on each side or an internal temperature on a meat thermometer reaches160ºF. Serve burgers on rolls topped with lemon-chive mayonnaise and lobster meat.
