INGREDIENTS

1/3 cup extra-virgin olive oil

2 Tbsp. champagne vinegar

2 Tbsp. fresh mint leaves, chopped

2 Tbsp. shallots, minced

-sea salt and fresh ground pepper to taste

2 14.5-oz. cans white beans, drained and rinsed

2 celery stalks, sliced thin on an angle

½ cup feta cheese, roughly crumbled

¼ cup black olives, chopped

DIRECTIONS

In a small bowl, whisk together oil, vinegar, mint, shallots and salt and pepper to taste; set aside. In a large serving bowl, combine beans, celery, cheese and olives. Add oil mixture and gently toss to coat well. Cover and refrigerate for 30 minutes to allow flavor to blend. Serve garnished with additional mint leaves if desired.
