Add All Ingredients

½ cup Big Y mayonnaise

2 Tbsp. chipotle pepper in adobo sauce, finely minced

2 tsp. fresh lime juice

1/8 tsp. smoked paprika

-sea salt and fresh ground pepper to taste

8 multi-grain bread slices

8 leaves loose leaf lettuce

6 thick-cut bacon slices, cooked

8 slices leftover Thanksgiving turkey

8 slices yellow bell pepper

8 sandwich-style dill pickle slices


In a small bowl, whisk together mayonnaise, chipotle pepper, lime juice, paprika and salt and pepper to taste. Evenly divide and spread the mayonnaise mixture on all 8 slices of bread. Top one slice with a lettuce leaf, 1½ strips bacon, 2 turkey slices, 2 slices yellow pepper, 2 pickle slices, a lettuce leaf and another slice of bread, mayonnaise-side down. Repeat with remaining ingredients.
