Fajita Turkey Burgers w/Guacamole

1. Wash hands with soap and water.

2. Rinse fresh produce.

3. Coat a large skillet with cooking spray and place over medium heat. Once hot, add onion and bell peppers and sauté for 5 minutes or until tender. Stir in 1/2 teaspoon fajita seasoning and salt to taste; remove from heat and let cool.

4. In a large bowl, combine onion mixture, remaining fajita seasoning, breadcrumbs, tomato paste, turkey, egg white and salt to taste. Using damp hands, divide turkey mixture into 6 equal portions, shaping each into a patty. Wash hands after handling raw turkey.

5. Coat grill grate with cooking spray and preheat to medium. Add burger patties and grill until internal temperature reaches 165 degrees Fahrenheit as verified with an instant-read food thermometer, about 5 minutes per side. During last 2 minutes of cooking, add a cheese slice to each burger, cover grill and let cheese melt as desired.

6. Place burgers on rolls and top with 2 tablespoons guacamole, lettuce, tomato and red onion and serve.
