¾ cup olive oil

¼ cup champagne vinegar

3 Tbsp. fresh lemon juice

3 Tbsp. fresh orange juice

1 Tbsp. Big Y pure honey

2 garlic cloves, minced

¼ tsp. red pepper flakes

-sea salt to taste

1 lb. Naked farm-raised jumbo raw shrimp, tailed removed (optional)

-Big Y no-stick cooking spray

8 cups arugula or mixed baby greens

½ small fennel bulb, cored and thinly sliced

2 oranges, peeled and cut into rounds

1 ripe avocado, peeled and cubed

DIRECTIONS

1. In a medium bowl, whisk together oil, vinegar, lemon juice, orange juice, honey, garlic, red pepper flakes and salt to taste; set dressing aside. 2. Coat a large sauté pan with cooking spray and place over medium heat. Add shrimp and cook, stirring frequently, for 2-3 minutes or until shrimp are opaque and cooked through. 3. In a large bowl, toss together greens, fennel and oranges. Add a little dressing and toss well. 4. Divide greens mixture between 4 plates, top with shrimp and avocado and serve with remaining dressing.
