-Big Y no-stick cooking spray

1 lb. fresh tilapia fillets

2 Tbsp. Big Y butter, melted

-sea salt and fresh ground pepper to taste

3 Tbsp. extra virgin olive oil

2 shallots, minced

4 garlic cloves, crushed

2 cups shiitake mushrooms, thinly sliced

1 Tbsp. fresh thyme, chopped

2/3 cup dry white wine

¼ cup Big Y all-purpose flour

2 cups Big Y reduced fat milk

1 cup Big Y heavy cream

½ cup fresh Parmesan cheese, grated

9 oz. tagliatelle noodles

DIRECTIONS

1. Preheat oven to 375°F. Line a baking pan with foil that has been coated with cooking spray. 2. Brush fillets lightly with butter and place in prepared pan; season to taste with salt and pepper. Bake for 20 minutes or until cooked through and flakes easily with a fork; gently cut into chunks, set aside and keep warm. 3. In a large pan over medium heat, add oil. Once hot, add shallot and cook for 2 minutes. Add garlic, mushrooms and thyme and cook, stirring often, for 3 minutes or until mushrooms are tender. 4. Add wine and simmer for 2 minutes or until reduced by half; stir in flour. 5. Stir in milk and cream and bring to a simmer. Reduce heat to low and let simmer for 2 minutes or until sauce thickens; stir in cheese until melted. 6. Cook pasta following package directions; drain, reserving ½ cup cooking water. . 7. Add reserved cooking water to cream mixture. Cook, stirring, for 1 minute; season with salt and pepper. 8. Serve pasta topped with fish and mushroom cream sauce.
