½ stick cold Big Y butter, cut into pieces

½ Tbsp. fresh parsley, minced

½ Tbsp. fresh thyme, minced

1 garlic clove, cut in half

¼ small cayenne pepper, seeded and minced

¼ lemon, juiced

-sea salt to taste

8 lemon slices

4 6-oz. fresh wild-caught cod fillets

DIRECTIONS

1. Preheat oven to 400°F. 2. In a food processor, combine butter, herbs, garlic, cayenne pepper, lemon juice and salt to taste; pulse until mixed well. 3. In the center of a large square of parchment paper, add 2 slices lemon. Place fish fillet on top of lemon and top with a quarter of the flavored butter; repeat with remaining fish fillets. Seal the packets and place on a large rimmed baking sheet. 4. Bake for 20 minutes or until cod flakes easily when tested with a fork. Serve immediately.
