Add All Ingredients

1 Tbsp. olive oil

1 Tbsp. Big Y butter

1 small onion, diced

3 garlic cloves, minced

2 medium carrots, diced

2 celery ribs, diced

1 medium turnip, peeled and cubed

1 14.5-oz. can fire-roasted diced tomatoes, undrained

4 cups vegetable broth

2 cups water

1 tsp. Big Y Italian seasoning

-sea salt and fresh ground black pepper, to taste

1 19-oz. can white beans, drained and rinsed

3 oz. kale leaves, ribs removed, torn


1. In a large soup pot over medium heat, add oil and butter. Once butter has melted, add onion and cook for 4 minutes or until onion starts to soften. 2. Add garlic, carrots, celery and turnip and cook, stirring often, for 5 minutes. 3. Add tomatoes and cook for 1 minute. 4. Add broth, water, Italian seasoning and salt and pepper to taste and cook for 15 minutes. 5. Add beans and kale and cook for 5-7 minutes, adding additional salt and pepper if needed. 6. Ladle into bowls and serve.
