Grilled White Fish with Mango Salsa

Grilled white fish with a spicy herb seasoning and a spicy-sweet mango salsa.

Ingredients

Directions

1. Wash hands with soap and water.

2. Rinse fresh produce.

3. Place fish fillets in a shallow dish and set aside. Wash hands after handling raw fish.

4. In a small bowl, combine oil, lime juice, cilantro, chili pepper, cumin, chili powder, garlic, salt and pepper. Pour over fillets in dish, cover and marinate on the bottom shelf in the refrigerator for 30 minutes.

5. While fish is marinating, prepare mango salsa. In a medium bowl, combine mangos, leek, red chili pepper, lime juice, salt and pepper. Cover and refrigerate until ready to serve.

6. Coat grill grate with cooking spray and preheat to medium.

7. Remove fillets from marinade and place on grill; discard used marinade.

8. Grill fillets until internal temperature reaches 145 degrees Fahrenheit as verified with an instant-read thermometer, about 4 minutes per side.

9. Transfer to serving plates and top with mango salsa.
