2 cups chopped seedless watermelon (NuVal Score - 94)

2 tablespoons lime juice

1 cup diced Sunset® Campari® Tomatoes (NuVal® Score – 96)

1 minced and seeded jalapeno, to taste (NuVal® Score – 99)

1 tablespoon minced fresh cilantro (NuVal® Score – 90)

1 tablespoon minced fresh mint (NuVal® Score – 96)

½ cup chopped fresh scallions (NuVal® Score – 100)

2 tablespoons Big Y® garlic powder

2 tablespoons Big Y® chili powder

2 tablespoons Big Y® ground cumin

2 tablespoons Big Y® paprika

3 Big Y® Air-Chilled Boneless Skinless Chicken Breasts from Smart Chicken® (NuVal® Score – 57)

2 tablespoons Big Y® olive oil (NuVal® Score – 11)

DIRECTIONS

1. In a medium bowl, mix together watermelon, lime juice, tomatoes, jalapeno, cilantro, mint and scallions. Cover and refrigerate salsa until ready to serve.
2. In a small bowl, mix together garlic powder, chili powder, cumin and paprika. Coat both sides of chicken breasts with spice mixture and discard any remaining spices.
3. Heat olive oil in a non-stick skillet over medium-high heat. Once pan is hot, add chicken and cook on both sides until internal temperature reaches 165°F with an instant-read thermometer.
4. Remove chicken from pan and top with prepared watermelon salsa to serve.
