3 Tbsp. olive oil

1 Tbsp. dried oregano

2 garlic clove, minced

¼ tsp. Crushed Red Pepper Flakes

- Big Y salt and ground black pepper to taste

6 Sam’s boneless, skinless chicken breasts, rinsed and patted dry

½ cup Big Y light mayonnaise

3 Tbsp. Florida’s Natural premium orange juice

¼ tsp. orange peel

1 tsp. apple cider vinegar

-Big Y no-stick cooking spray

8 cups raw baby spinach

2 11-oz. cans mandarin oranges, drained

½ cup crumbled blue cheese

DIRECTIONS

In a large shallow dish, combine oil, oregano, garlic, red pepper flakes and salt and pepper to taste. Add chicken, cover and marinate in the refrigerator for at least 1 hour, flipping chicken halfway through marinating time. In a small bowl, whisk together mayonnaise, orange juice, orange peel, vinegar and salt and pepper to taste; cover and refrigerate until ready to serve. Coat grill rack with cooking spray and preheat to medium. Remove chicken from marinade and place on the grill; discard marinade. Grill chicken for 6 minutes per side or until no longer pink and cooked through. Remove from grill and let rest; slice into strips. In a large bowl, combine spinach, oranges and cheese; top with sliced chicken. Serve with dressing on the side.
