Chocolate Cherry Bark

1. Wash hands with soap and water.

2. Line an 8x8-inch square pan with parchment paper set aside.

3. In a double boiler or a large heatproof glass bowl over a pan of simmering water, stir 9 ounces dark chocolate until melted. Remove from heat and stir in cherries and vanilla.

4. Carefully pour into prepared pan, using a spatula to evenly spread out the chocolate. Place pan in the refrigerator for 5 to 10 minutes for chocolate to become slightly hard.

5. Melt the white chocolate using the same process as the dark chocolate. Once melted, remove from heat and stir in cherry juice.

6. Remove pan with dark chocolate from refrigerator and pour white chocolate over top, using a spatula to evenly spread out the white chocolate.

7. Return pan to the refrigerator for 10 to 15 minutes or until bark is fully set.

8. In a microwave-safe bowl, heat remaining dark chocolate on high heat for 20 seconds. If necessary, microwave at additional 5 to 10 second intervals, stirring just until chocolate is melted.

9. Pour melted chocolate into a resealable plastic bag.

10. Cut a small slit in the corner of the bag and pipe straight horizontal lines across from left to right of pan over top of white chocolate layer.

11. Drag a tip of a toothpick or paring knife vertically through the piped chocolate from top to bottom.

12. Return pan back to the refrigerator for 10 to 15 minutes or until bark is fully set.
