2 5-oz. pkg. frozen Orion cooked lobster meat, thawed

1/3 cup celery, finely diced

3 Tbsp. green onion, finely chopped

¼ tsp. dried tarragon, crushed

½ cup Big Y mayonnaise

2 Tbsp. Big Y heavy cream

1 Tbsp. fresh lemon juice

several dashes Big Y Louisiana hot sauce (to taste)

½ tsp. Big Y salt

1 tsp. freshly ground pepper

4 Big Y hot dog rolls, split

3 Tbsp. Big Y unsalted butter, melted

DIRECTIONS

Preheat oven to 350°F. In a medium bowl, combine lobster, celery, green onion and tarragon. In a separate bowl using an electric mixer, beat together mayonnaise, heavy cream and lemon juice. Stir in hot sauce, salt and pepper; add to lobster mixture. Place in refrigerator to chill until rolls are done. Split the rolls, brush the cut sides with butter and bake on a baking sheet for 5 minutes or until they are lightly browned. Fill each roll with the lobster salad, cut in half and serve.
