Pork & Veggie Stir-Fry

In theory, a stir-fry is the model weeknight dinner. It takes less than an hour to get on the table, it combines vegetables and protein in a single dish, it's relatively healthy, and it requires no accompaniment other than noodles or rice. Get out your wok (or skillet) and get cooking!

1 Tbsp. less sodium soy sauce

1 Tbsp. rice wine vinegar

1 tsp. sesame oil

1 1/2 tsp. Big Y cornstarch

1 lb. Hormel Always Tender or Natural Choice boneless center cut pork chops

1 cup Swanson low sodium chicken broth

2 Tbsp. less sodium soy sauce

-Big Y salt and ground black pepper to taste

1 tsp. Big Y sugar

1 Tbsp. Big Y canola oil

2 to 3 garlic cloves, chopped

1 tsp. fresh ginger, peeled and finely chopped

2 Tbsp. hoisin sauce

16-oz. bag of your favorite Big Y frozen stir-fry vegetables, thawed

2 Tbsp. fresh cilantro, chopped

2 green onions, green part only, chopped

DIRECTIONS

In a large bowl, combine all marinade ingredients, adding cornstarch last. Cut pork across the grain into thin strips approximately 1 1/2 inches long and ¾ inch wide. Add to marinade, cover with plastic wrap and marinate in the refrigerator for 30 to 40 minutes. In a small bowl, combine all sauce ingredients and set aside. Heat a nonstick skillet or wok over medium-high heat; add oil. Remove pork from bowl and discard marinade. When oil is hot, add pork laying it flat in the pan. Sear pork on both sides and then stir fry briefly until it is cooked through; remove from pan and keep warm. In a large saucepot over medium heat, add garlic and ginger and stir-fry for about 1 minute. Add hoisin sauce and stir until blended. Add stir-fry vegetables, cilantro and green onion. Return heat to medium-high and add pork. Add sauce and bring to a boil. Serve hot over noodles or rice.
