-Food Club non-stick cooking spray
4 slices whole wheat bread
1/3 cup grated Parmesan cheese
1 1/2 tablespoons fresh parsley, minced
1/2 tablespoon Full Circle Market Organic paprika
3/4 teaspoon Full Circle Market Organic garlic powder
1/2 teaspoon Full Circle Market Organic dried thyme
1/2 cup low-fat buttermilk
6 boneless, skinless chicken breasts
1 cup Food Club pasta sauce
3/4 cup Food Club shredded Parmesan cheese
Step 1: Wash hands with soap and water.
Step 2: Rinse all fresh produce items under cold running water prior to prepping.
Step 3: Preheat oven to 450°F. Lightly coat a rectangular baking sheet and slightly smaller cooling rack with cooking spray. Place rack on the baking sheet and set aside.
Step 4: In a food processor or blender, add bread, Parmesan, parsley, paprika, garlic powder and thyme and process into fine crumbs; transfer a shallow bowl.
Step 5: Place buttermilk in another shallow bowl.
Step 6: Set the bowl with the buttermilk, the bowl with the crumbs, and the baking sheet and rack in a row, assembly-line fashion.
Step 7: Discard all the visible fat from the chicken. Dip the chicken into the buttermilk, shaking off the excess liquid. Coat in the crumbs, shaking off excess crumbs; place on the rack on the baking sheet. Lightly coat tops of chicken with cooking spray. Wash hands after handling raw poultry.
Step 8: Bake for 15 minutes. Turn over and bake for 10 minutes, or until chicken reaches an internal temperature of 165°F as verified with an instant-read food thermometer.
Step 9: Remove from oven and carefully top each chicken breast with pasta sauce and cheese. Return to oven and bake for 5 minutes or until cheese is melted.
