-butter flavored cooking spray

1 garlic clove, minced

1 (15-ounce) can reduced-sodium black beans, drained and rinsed

3 green onions, sliced

1/4 cup canned corn, drained

¼ teaspoon Full Circle Market Organic ground cumin

½ teaspoon Full Circle Market Organic chili powder

1/4 teaspoon Full Circle Market Organic ground cumin

1/2 teaspoon Full Circle Market Organic chili powder

1 cup Food Club salsa

1 cup cooked Food Club rice

1/4 cup fresh parsley, chopped

6 (8-inch) flour tortillas

DIRECTIONS

Step 1: Wash hands with soap and water.

Step 2: Rinse all fresh produce items under cold running water prior to prepping.

Step 3: Coat a large pan with cooking spray and place over medium heat. Add garlic and sauté for 2 minutes. Stir in black beans, green onion, corn, cumin, chili powder, salsa and rice. Reduce heat and simmer, uncovered, for 5 minutes, stirring occasionally. Remove from heat and stir in parsley.

Step 4: Preheat oven to 300°F.

Step 5: Divide rice and bean mixture between the tortillas and roll up; place in a glass baking dish that has been lightly coated with cooking spray. Bake for 10 minutes or until heated through. Serve with sour cream if desired.
