1 cup Panko breadcrumbs

1/2 cup Food Club Italian breadcrumbs

1 teaspoon lemon zest

1 teaspoon seafood seasoning

1/4 teaspoon Full Circle Market Organic cayenne pepper

Full Circle Market Organic ground black pepper, to taste

3 egg whites

1/3 cup Food Club all-purpose flour

1 1/4 pounds cod fillets, cut into thick strips

Step 1: Preheat oven to 425°F. Coat a baking sheet with cooking spray; set aside.

Step 2: Wash hands with soap and water.

Step 3: In a large shallow dish, combine both breadcrumbs, lemon zest, seafood seasoning, cayenne pepper and pepper.

Step 4: In another shallow dish, add egg whites. Wash hands after handling raw eggs.

Step 5: Place flour in a large plastic bag. Add fish strips and shake to coat well.

Step 6: Dip fish strips, one at a time, in the egg and then coat in breadcrumbs; place on a baking sheet. Wash hands after handling raw flour, fish and eggs.

Step 7: Bake for 14 minutes or until internal temperature reaches 145°F as verified with an instant-read food thermometer.

Step 8: Serve with your favorite tartar sauce.
