1 Food Club refrigerated pie crust, thawed according to package directions

3/4 cup Food Club light brown sugar

1 tablespoon Food Club all-purpose flour

1/2 teaspoon Food Club salt

1 tablespoon pumpkin pie spice

2 cups Food Club 100% pure pumpkin

3 Big Y large eggs, beaten

1 3/4 cups evaporated milk, divided

1 teaspoon Full Circle Market Organic 100% pure maple syrup

2/3 cup flaked coconut

1/2 cup pecans, roughly chopped

Step 1: Preheat oven to 400°F.

Step 2: Wash hands with soap and water.

Step 3: Line a 9-inch deep-dish pie pan with pie crust, folding overhanging dough under to make a plump edge; pinch crust into V-shapes all around edges.

Step 4: In a large bowl, combine brown sugar, flour, salt, pumpkin pie spice and pumpkin. Stir in eggs, 11/2 cups evaporated milk and maple syrup. Pour into pie crust, cover edges of crust with foil and bake for 25 minutes. Remove foil and continue to bake for 15 minutes or until filling is set.

Step 5: In a small bowl, combine remaining evaporated milk, coconut and pecans; spread on top of pie. Reduce oven temperature to 350°F and continue to bake for 5 minutes or until topping is lightly golden.
