1 garlic clove, minced
1/2 teaspoon Food Club Dijon mustard
3 tablespoons champagne or white wine vinegar
9 tablespoons Food Club olive oil, divided

3 1/2 cups your favorite bread, cut into cubes
1 1/2 cups fresh spinach
1 1/2 cups tomatoes, cut into thin wedges
1/4 cup red onion, cut into rings
2 tablespoons capers
1 (8 ounce) container fresh mozzarella cheese pearls, drained

Step 1: Wash hands with soap and water.
Step 2: Rinse all fresh produce items under cold running water prior to prepping.
Step 3: In a shaker jar with a tight-fitting lid, combine garlic, mustard, vinegar, 6 tablespoons oil, salt and pepper; cover and shake to combine.
Step 4: In a large skillet over medium heat, add remaining oil. Once hot, add bread cubes, salt and pepper and cook for 6 minutes, stirring frequently, or until nicely browned; remove from heat.
Step 5: In a large bowl, combine spinach, tomatoes, onion, capers, cheese, toasted bread cubes and vinegar mixture and toss to coat. Season with additional salt and pepper, if desired. Let sit for 30 minutes to allow flavors to blend before serving.
