4 plum tomatoes, seeded and chopped

3 garlic cloves, minced

2 tablespoons shallot, minced

2 tablespoons fresh parsley leaves, minced

3 tablespoons Food Club olive oil

2 teaspoons balsamic vinegar

Full Circle Market sea salt and ground black pepper, to taste

1 Full Circle Market French baguette, cut into 14 slices

14 slices fresh mozzarella cheese

14 fresh basil leaves

Step 1: Preheat oven to broil.

Step 2: Wash hands with soap and water.

Step 3: Rinse all fresh produce items under cold running water prior to prepping.

Step 4: In a small bowl, combine tomatoes, garlic, shallot, parsley, olive oil, vinegar, salt and pepper.

Step 5: Top baguette slices with a piece of mozzarella. Place on ungreased baking sheets and broil 3-4 inches from heat for 2 minutes or until cheese begins to melt. Remove from oven and let cool.

Step 6: With a slotted spoon, top each slice with about 1 tablespoon tomato mixture and garnish with basil leaves.
