1. Wash hands with soap and water.
2. Rinse all fresh produce items under cold running water prior to prepping.
3. In a medium pot over medium-high heat, add butter. Once melted, add onion, celery and carrots and sauté for 5 minutes or until vegetables are just tender. Add peas, hambone and water and bring to a boil. Reduce heat to medium-low. Partially cover pot and simmer soup for 1 hour, stirring often, or until ham and vegetables are tender and peas are falling apart. Remove a cup of soup and set aside.
4. Transfer pork hocks to a cutting board, cut pork off bones and chop.
5. Using an immersion blender, carefully puree remaining soup in pot until smooth; season with salt and pepper.
6. Ladle soup in bowls and top with reserved soup and chopped pork.
