1 pound ground beef
1 (15.5-ounce) can garlic and onion flavored diced tomatoes, undrained
½ box cooked beef flavored rice mix
4 large bell peppers
-Full Circle Market sea salt and ground black pepper, to taste
1/2 cup water
3/4 cup Food Club tomato sauce
1/2 cup Food Club shredded mozzarella cheese
Step 1: Preheat oven to 350°F.
Step 2: Wash hands with soap and water.
Step 3: Rinse all fresh produce items under cold running water prior to prepping.
Step 4: In a large skillet over medium heat, add beef. Cook for 8 minutes or until meat reaches an internal temperature of 160°F as verified with an instant-read food thermometer, stirring to break up large clumps; drain. Wash hands after handling raw beef.
Step 5: Add diced tomatoes with juice, beef flavored rice mix, salt and pepper; cook until heated through.
Step 6: Cut tops off 4 large bell peppers and remove membranes and seeds. Stuff each pepper evenly with beef mixture and place in a baking dish; pour water in the bottom of the pan.
Step 7: Bake for 30 minutes. During the last 10 minutes, top with some tomato sauce, shredded mozzarella cheese and pepper top.
