1 pound ground beef

1 cup onion, chopped

2 garlic cloves, minced

2 cups Food Club salsa

2 teaspoons Full Circle Market Organic chili powder

1 teaspoon Full Circle Market Organic ground cumin

1 cup Food Club shredded cheddar cheese

-sea salt and Full Circle Market Organic ground black pepper, to taste

20 corn tortillas

-Food Club canola oil for frying

DIRECTIONS


1. Wash hands with soap and water.

2. In a large skillet over medium heat, combine ground beef, onion and garlic. Wash hands with soap and water after handling raw beef. Cook mixture for 6 minutes or until beef is cooked to a temperature of 160°F as verified with an instant-read food thermometer, breaking it up with the back of a spoon; drain.

3. Return pan with beef to stove and stir salsa, chili powder, cumin, cheese, salt and pepper; simmer over low heat for 3 minutes.

4. Warm up tortillas according to package directions. Spoon 1-2 tablespoons of beef mixture into the center of each tortilla; roll up. Use toothpicks to hold the tortillas tightly together.

5. In a large skillet with 2 tablespoons oil, fry a few taquitos at a time, for 2-3 minutes; drain on paper towels. Continue to fry remaining taquitos, adding more oil as needed. Remove toothpicks and serve.
