Country Ribs with Tennessee Whiskey Sauce

1/2 cup onion, minced
4 garlic cloves, minced
1/2-3/4 cup whiskey, to taste
2 cups Food Club ketchup
1/4 cup Food Club tomato paste
1/4 cup molasses
1/3 cup Big Y cider vinegar
2 tsp. liquid smoke flavoring
3 Tbsp. Worcestershire sauce
1/2 cup Food Club light brown sugar
1/2 tsp. hot sauce, or to taste
-sea salt and Full Circle Market ground black pepper, to taste
3 lb. country-style pork ribs
-Food Club nonstick cooking spray
1. Wash hands with soap and water.
2. In a large skillet over medium heat, combine onion, garlic and whiskey. Simmer for 10 minutes or until onion is translucent. Stir in ketchup, tomato paste, molasses, vinegar, liquid smoke, Worcestershire sauce, brown sugar, hot sauce, salt and pepper; bring to a boil. Reduce heat to medium-low and simmer for 20 minutes. Remove from heat; reserve half for later use.
3. Place ribs in a large pot or Dutch oven filled with salted water; bring to a boil over medium-high heat. Wash hands with soap and water after handling raw pork. Reduce heat to medium, cover and cook for 15 minutes or until ribs are just tender, drain well.
4. Coat grill grate with cooking spray and preheat to medium. Place ribs on grill and grill for 20 minutes or until internal temperature reaches 145°F as verified with an instant-read thermometer. Baste generously with sauce during the last 10 minutes of grill time. Remove from grill, tent with foil and let sit for 3 minutes. Serve ribs with reserved sauce.
