1 1/2 pounds of chicken breast tenders

1 each yellow, red and orange bell pepper, sliced thin

1 small onion, sliced

2 tablespoons of olive oil

1 teaspoon of salt

1/2 teaspoon fresh cracked black pepper

2 teaspoons chili powder

1/2 teaspoon each garlic powder, onion powder, ground cumin

1 lime

fresh cilantro

8 corn tortillas, optional

DIRECTIONS

Preparation


1.Preheat oven to 425 degrees.
2.In a large bowl, combine chicken tenders, bell pepper, onion, olive oil, salt and pepper and spices, toss to combine.
3.Spray baking sheet with cooking spray. Spread chicken, bell peppers and onions on baking sheet. Place in oven and cook for about 20 minutes.
4.Turn oven to broil and cook for additional 1-2 minutes giving chicken and vegetables a chance to caramelize. Watch carefully to make sure they don't start to burn.
5.Squeeze juice from fresh limes over fajita mixture and top with fresh cilantro and serve in warm tortillas, if desired.
