Chicken Satay with Peanut Sauce

1. Wash hands with soap and water.

2. Rinse fresh produce.

3. In a large skillet over medium heat, add peanut oil. Once hot, add shallots, garlic, ginger and chili pepper; cook and stir for 3 minutes or until shallots begin to turn golden brown.

4. Reduce heat to low and stir in peanut butter, coconut milk, soy sauce, brown sugar, oyster sauce and lime juice. Simmer very gently for 10 minutes, stirring often; keep warm.

5. Preheat oven to 425 degrees Fahrenheit. Line a baking tray with parchment paper.

6. Weave chicken onto skewers and place on baking tray. Season with salt and pepper. Wash hands with soap and water after handling chicken.

7. Place tray into oven and bake for 18 minutes or until internal temperature reaches 165 degrees Fahrenheit on food thermometer.

8. Serve with peanut sauce, garnished with parsley.
