Directions

1. Wash hands with soap and water.

2. Rinse fresh produce.

3. In a large bowl, combine rice, tuna, bell pepper, tomatoes, corn, cucumber and parsley.

4. In a small bowl, whisk together oil, lemon juice, garlic, shallots and salt and pepper to taste.

5. Pour over salad and toss to coat well. Let chill for 30 minutes to allow flavors to blend if desired.
