2 Tbsp. Big Y pure olive oil

2 Tbsp. Big Y salted butter

1 cup red onion, sliced

2½ cups leftover turkey, cut into small strips

1½ cups leftover stuffing

2 cups leftover green beans

10 Boston Bibb lettuce leaves

1 cup leftover cranberry sauce

3 Tbsp. pine nuts

-sea salt and fresh ground pepper to taste

DIRECTIONS

1. In a large skillet over medium heat, add oil and butter. Once butter has melted, add onion and sauté for 5 minutes or until softened. Add turkey, stuffing and green beans and cook for 3 minutes or until warmed through. 2. Evenly divide turkey mixture between the lettuce leaves. Top each with a tablespoon of cranberry sauce and a teaspoon of pine nuts; season to taste with salt and pepper.
