1 (9-inch) whole grain tortilla

1-2 tablespoons Ranch dressing

2-3 slices natural turkey deli meat

1/2 cup cooked brown rice

1/4 cup shredded carrots

2 slices seedless cucumber, peeled and cut into thin strips

1/4 cup shredded lettuce

1 slice tomato, cut into thin strips

1 slice Cheddar cheese, cut into thin strips

DIRECTIONS

1. Heat tortilla in microwave for 15 seconds.
2. Coat tortilla with dressing. Layer turkey slices on top. Add rice onto half of turkey and press down to flatten.
3. In the middle of the tortilla, layer carrots, cucumber, lettuce, tomato and cheese in a line.
4. Roll tortilla around rice and veggies, cut into slices of "sushi" and secure with toothpicks.
5. When packing for school lunch, pair with mixed berries and a milk box.
