1 cup quinoa

2 cups water

2 Tbsp. Big Y pure olive oil, plus more for cooking

½ cup green onion, diced

4 garlic cloves, minced

½ cup roasted garlic and Parmesan potato flakes

¾ cup fresh Big Y baby spinach, shredded

½ cup shredded sharp cheddar cheese

2 Tbsp. fresh parsley leaves, minced

2 big Y Large White Eggs

2-4 dashes Big Y Louisiana hot sauce

-Big Y vegetable oil for frying

DIRECTIONS

1. In a medium saucepan over medium-high heat, combine quinoa and water; let boil. Reduce heat, cover and let simmer for 12 minutes or until tender and water is absorbed; transfer to a bowl and let cool completely. 2. In a medium skillet over medium heat, add 2 tablespoons oil. Once hot, add green onion, garlic and spinach and let cook for 2 minutes; set aside and let cool completely. 3. In a large bowl, combine quinoa, green onion mixture, potato flakes, cheese, parsley, eggs, hot sauce and salt and pepper to taste; mix well. Form mixture into 12 patties – mixture will be slightly sticky. , 4. Heat a frying pan and a couple teaspoons oil over medium heat. Fry for 4 minutes per side or until golden brown. 5. Serve with your favorite salad.
