1. Wash hands with soap and water.

2. Rinse fresh produce.

3. In a large saucepan over medium-high heat, cook ground turkey and onion until turkey reaches an internal temperature of 165 degrees Fahrenheit as verified with an instant read food thermometer. Break up large clumps of turkey with a spoon. Wash hands with soap and water after handling uncooked turkey.

4. Add remaining ingredients and bring to a boil.

5. Cover, reduce heat, and let simmer for 25 minutes, stirring occasionally. Serve garnished with parsley if desired.
