This recipe servs 4 persons and can be used as a side dish to any of your favorite poultry dishes and especially thanksgiving with your turkey. If you are serving more than 4 persons use 4 large sweet potates double all ingredients except maple syrup and dark brown sugar, only increase to 3/4 cup. This will serve 6 to 8 persons.
4 medium sweet potatoes
1 stick Big Y butter
1/2 tsp nutmeg
1/4 tsp cinnamon
1/2 tsp vanilla extract
1/2 tsp orange extract
1/2 tsp grated orange peel
1/2 cup plus 2 tbls dark brown sugar
1/3 cup Big Y heavy cream
1/2 cup pure maple syrup
preheat oven to 350 degrees. Boil sweet potatoes until done (approx 20-30 minutes). When potatoes are done, peel them while they are hot. Place potatoes in a large mixing bowl add next 6 ingredients and mix with hand mixer or by hand until butter is completely melted. Next, add 1/2 cup of dark brown sugar (remember to leave 2 tbls for in reserve) mix 1 minute. Heat heavy cream in microwave to take the chill off 10 sec. Add heavy cream. Mix on low speed until well mixed ( 2 minutes). Finally, add the maple syrup and stir by hand just enough to incorporate. Put mashed sweet potatoes in a oven proof dish and place it in the oven for 20 minutes. After 20 minutes sprinkle remaining brown sugar on top and set the oven to broil. Broil for about 1 to 2 minutes until the brown sugar just bubbles. Do not stir. Remove from oven and serve hot.
