Ingredients:
1⁄4 cup Big Y butter, melted 
3 Tbsp. Big Y honey
1 1⁄4 Tbsp. Big Y lemon juice
1⁄2 Tbsp. crystallized ginger, minced
6 medium sweet potatoes
2 Tbsp. Big Y brown sugar
– Big Y ground cinnamon
– lemon zest curls for garnish
Instructions:
Preheat oven to 350˚F.

In a small bowl, combine butter, honey, lemon juice and ginger; mix well.

Wash, peel and cut potatoes into ¼-inch-thick slices. Place one
layer of sweet potatoes in the bottom of a 9x13-inch baking dish. Spread with a little butter mixture. Continue layering until all the slices and butter mixture are gone. Cover with foil and bake for 35 minutes. Remove foil and bake for 20 minutes longer or until potatoes are tender. Sprinkle potatoes with brown sugar and cinnamon. Place under the broiler for 2 minutes or until nicely browned. Garnish with lemon zest curls before serving.
