Let ice cream sit at room temperature for 10 minutes to slightly soften. Scoop out some ice cream and spread it on one of the cookies; top with another cookie to form a sandwich. Gently press together and trim the sides with a knife. Wrap the sandwich in foil and freeze overnight before serving. Repeat until you have used all the cookies and ice cream. |
