Ingredients:
1 container Turkey Hill Choco 
Mint Chip Ice Cream
1 dozen triple chocolate cookies,
from the Big Y Bakery
1 cup Big Y
powdered sugar
1 to 2 Tbsp. Guida’s 2% milk
Instructions:
Let ice cream sit at room temperature for 10 minutes to slightly soften. Scoop out some ice cream and spread it on one of the cookies; top with another cookie to form a sandwich. Gently press together and trim the sides with a knife. Wrap the sandwich in foil and freeze overnight before serving. Repeat until you have used all the cookies and ice cream.
In a small bowl, combine powdered sugar and 1 to 2 tablespoons milk. Whisk together, adding more milk until consistency is smooth and thin enough to drizzle over cookies.
Drizzle the tops of each sandwich cookie with icing before serving.
