Ingredients:

1/2 cup cooked Big Y brown rice

1/2 cup crumbled plain low-fat feta or goat cheese

1/3 cup fat-free Italian dressing

12 large Boston lettuce leaves

1 15-ounce can Bush's Best Black Beans, rinsed and drained

1/4 cup chopped chives or green onions

Instructions:

Step 1. Combine rice, cheese and dressing.

Step 2. Lay lettuce leaves flat on plate and spoon rice mixture, beans and chives on each.
