Ingredients:
2 cups Bob’s Red Mill® Gluten-Free Rolled Oats
1 1⁄2 cups Bob’s Red Mill® Gluten-Free All-Purpose Baking Flour
1⁄4 cup Bob’s Red Mill® Creamy Brown Rice Farina
1⁄2 teaspoon Big Y® cinnamon, ground
1⁄2 teaspoon Morton® Lite Salt™
2⁄3 cup Big Y® brown sugar
2⁄3 cup Big Y® applesauce, unsweetened
1 cup Big Y® apple juice
1⁄4 cup Big Y® canola oil
1 teaspoon Big Y® vanilla
3⁄4 cup chocolate chips
1⁄2 cup pecans
Instructions:
Step 1: Preheat oven at 375°F.
Step 2: Oil a 9x13-inch pan.
Step 3: In a large bowl stir together the oats, flour, rice farina, cinnamon and salt.
Step 4: Stir in brown sugar with a fork.
Step 5: In a small bowl stir together the applesauce, apple juice, canola oil and vanilla.
Step 6: Pour the wet ingredients into the large bowl with the dry ingredients and blend together with a wooden spoon.
Step 7: Stir in the chocolate chips and pecans.
Step 8: Spread mixture into the pan and smooth with the back of the spoon.
Step 9: Bake for 30 minutes.
Step 10: Remove pan from oven, cut into 24 pieces and place on two baking trays, separating the bars a little.
Step 11: Place bars back into the oven and bake
10 more minutes.
Step 12: Cool on a rack.
Step 13: Store well in a sealed container or freeze.
