Ingredients:
6 small flour tortillas
6 ounces of Cabot® 50% Light Pepper Jack Cheese (about 1 1⁄4 cup grated)
12 ounces of World Classics Trading Company™ cooked shrimp, thawed, halved lengthwise or diced
4 scallions, chopped
Big Y® ground black pepper to taste
Whole sprig cilantro and lime wedges for garnish
Instructions:
1. Lightly spray a small skillet with cooking spray and place  over medium heat.
2. Heat one tortilla thoroughly, about 30 seconds per side.
3. Remove and immediately fill tortilla:
a. On one half of the tortilla, place one-sixth of cheese,
followed by one-sixth of shrimp and scallions.
b. Fold tortilla in half, pressing to seal. Cover to keep warm and set aside.
4. Repeat process with the remaining five tortillas.
5. Garnish quesadillas with cilantro sprigs and lime wedges.
