1 cup DANNON All Natural Nonfat Plain yogurt
1 cup King Arthur Unbleached All-Purpose flour
1 cup King Arthur Traditional Whole Wheat flour
1 tablespoon pumpkin pie spice
1 teaspoon Big Y baking soda
1/8 teaspoon Big Y salt
1/2 cup Promise Buttery Spread
1/2 cup SPLENDA Brand Sweetener, Granular
2 large egg whites
1/2 cup molasses
1 tablespoon water
1 teaspoon King Arthur Traditional Whole Wheat flour
1/2 cup Dole raisins
2 teaspoons sliced almonds
1. Pre-heat oven to 425.2. Grease 9x5 loaf pan.3. Sift together flour, pumpkin pie spice, baking soda and salt onto a sheet of wax paper and set aside.4. In a large bowl beat together Promise and SPLENDA until light and fluffy.5. Add egg whites and mix well.6. Scrape down bowl sides, add molasses, and mix well.7. Alternate adding the flour and yogurt, mixing well between additions.8. Add 1 tablespoon of water to mix.9. Mix raisins with 1 teaspoon flour until coated and fold into mixture.10. Pour batter into prepared pan.11. Sprinkle top with almonds.12. Bake 50-60 minutes, or until toothpick comes out clean from center.13. Let cake cool at least one hour before cutting into 18 slices.
