Recipe from Enova Oil published in the Living Well Eating Smart newsletter issue #7 on October 5th, 2006.

Ingredients:

2 cups Big Y All-Purpose flour
3/4 cup Big Y granulated sugar
3/4 teaspoon Big Y salt
1 1/2 teaspoons baking powder
1/2 teaspoon Big Y baking soda
1 cup chopped cranberries
1/2 cup chopped walnuts
1 tablespoon orange zest
1/4 cup of egg substitute
2 tablespoons Enova brand oil
3/4 cup Tropicana Pure Premium
orange juice

Instructions:

1. Preheat oven to 350°F.
2. Grease a 9x5 inch loaf pan (or see Eating Smart Tip below).
3. Combine flour, sugar, salt, baking powder and baking soda.
4. Add cranberries and chopped nuts to flour, stir to coat.
5. In a separate bowl, combine egg substitute, Enova oil, orange juice and grated orange peel.
6. Add the egg mixture to flour mixture, stirring until just combined.
7. Spoon batter into the prepared pan.
8. Bake at 350°F for 50 minutes or until a toothpick comes out clean.
9. Let bread sit for 10 minutes,
10. Remove bread from pan and allow to cool on cooling rack before slicing.
