Ingredients:
1 lb. Driscoll’s® strawberries
3/4 lb. Driscoll’s® blueberries, rinsed
2 cups light vanilla ice cream (or frozen yogurt)
4-1/4 cups Big Y® sparkling water
1 tablespoon Big Y® lemon juice
1/4 cup Big Y® sugar for frosting glasses
1/4 cup water
Fresh mint leaves for garnishing
Instructions:
Strawberry Puree:1. Rinse strawberries and remove stems for puree.2. Place strawberries in blender or food processor and puree until smooth.3. Strain puree and refrigerate.Glass frosting:1. Spread 1/4 cup sugar evenly on small plate.2. Measure 1/4 cup water into small bowl.3. Dip rims of glasses first in water, then in sugar to coat rims.4. Keep glasses in freezer until ready to prepare sodas.For each soda:Layer blueberries and ice cream in glasses as follows:1. Add about 1/4 of the blueberries to the bottom of the glass.2. Add one small scoop of light ice cream and repeat, finishing with a third layer of blueberries.(Prepared glasses can be held in the freezer for several hours until ready to serve.)3. In a large pitcher, gently blend strawberry puree, sparkling water and lemon juice.4. Pour mixture into frosted glasses.5. Garnish soda with mint leaves and remaining berries.
