Ingredients:
2 minced garlic cloves
1/2 Tbsp of Enova Oil
1/2 cup washed, chopped broccoli
1/2 cup washed, chopped cauliflower
1/2 cup washed, sliced zucchini
1/2 cup washed, sliced summer squash
1 jar of Francesco Rinaldi No Added Salt Traditional Pasta Sauce
1 pound raw, Natural or Organic Boneless Skinless Chicken Breast
2 cups of cooked Barilla PLUS pasta
Instructions:
Preheat oven at 400ºF Place Boneless Skinless Chicken Breast and 1 cup of Francesco Rinaldi No Added Salt Traditional Pasta Sauce in a shallow pan in preheated oven. Cook until done (internal temperature of 170º F). Cook Barilla PLUS pasta according to package directions. Heat Enova oil in pan and sautè garlic until turns gold in color. 

Add fresh broccoli, cauliflower, zucchini, and summer squash. Sautè vegetables 2-3 minutes or until softened (but be careful not to overcook!). Add 2 cups of Francesco Rinaldi No Added Salt Traditional Pasta Sauce and heat until sauce bubbles. Reduce heat and simmer. Serve with Barilla PLUS pasta topped with Boneless Skinless Chicken Breast and Francesco Rinaldi No Added Salt Traditional Pasta Sauce with added vegetables. Sprinkle dish with parmesan cheese.

Eating Smart Meal Addition.
For an additional serving from the Grain group, add 1/2 cup more pasta but watch those portion sizes!
