Purple Potatoes

Grown worldwide in hundreds of varieties, the potato is no less than one of the world’s most versatile vegetables. Purple potatoes are similar in taste to a regular russet. They have a creamy texture and are rich in flavor. Purple potatoes taste great when baked, broiled, mashed, or fried. They will add color and style to your meal. Try them in potato salad or bake purple potato chips for a fun treat.

Display: It is easy to create colorful displays using a variety of potatoes, all-purpose potatoes, yams or sweet potatoes and a combination of other tubers such as cassava or taro root.

Seasonality: Available August - November. Peak

Selection & Storage: Look for firm, well shaped, fairly smooth potatoes. Avoid any white discoloration and which causes it to taste bitter. Avoid any potatoes that show signs of sprouting, wilting, wrinkling or decay. Store in a cool, well-ventilated area rather than refrigerate.
