Melissa’s Chinese Eggplant can be distinguished from other popular oriental eggplant varieties by its color and size. Chinese Eggplant is usually lavender or white and is even longer than the darker purple Japanese Eggplant. Although Chinese Eggplant is botanically a fruit, it’s more commonly used as a vegetable and resembles a small zucchini. Sweeter and more tender than regular eggplant, Melissa’s Chinese Eggplant has fewer, smaller seeds.
Generally left with the skin on, Chinese Eggplant is rarely peeled since its thinner, more pleasant tasting skin preserves it texture, taste and shape. Interchangeable in many favorite recipes, Melissa’s Chinese Eggplant must be cooked well to obtain the best flavor.
Seasonality: Available year-round.
Selection & Storage: Chinese Eggplant from Melissa’s is hand-selected for excellent quality. Choose eggplant that is heavy for size with firm, glossy skin. Chinese Eggplant has a shorter shelf life than common eggplant. If firm when purchased, refrigerate in a plastic bag for up to a week.
Preparation: Rinse and pat dry.
