All fresh poultry will keep in refrigerator for 1 week, and then you should freeze the poultry.
Chickens
Fryers
Plump, meaty, free-range raised birds with rich, natural buttery flavor. Fed on organically-grown grains and pure spring water, they mature to tender, juicy frying size of 2 1/2 to 5 lbs. Available year-round.
Cooking:
For perfect roasting, brush dry areas of the skin with pan drippings occasionally. The chicken is done when the thickest part of the drumstick feels very soft when pressed between fingers protected with paper towels. When using a meat thermometer, the temperature should read 185°

Roasters
Known for their rich, fresh-chicken flavor, these roasters feature full, tender white breasts and savory dark meat. Roasting chicken are available year round.

Capons
All natural, free-range capons are even more flavorful and tender than roasting chickens and turkey, and as easy to roast as chicken. Capons are surgically caponized, 8 to 12 lb., mature birds propared for market when 18-20 weeks old. Capons are available year round. Whole capons, breasts and boneless breasts are available upon request.
Cooking:
Similar to roasting chicken,
capons are cooked in a 375° oven 3-4 hours
Cornish Game Hens
Cornish Game Hens are a breed of domestic chicken that weighs 16-24 ounces dressed when fully mature. They have a light savory flavor slightly stronger than chicken, but not as strong as partridge or quail. Eberly has cornish Game Hens available year round.
Cooking:
16-24 oz birds are roasted in a 400° oven for 1-1 1/2 hours
Roast loosely covered for 30 minutes, then uncovered for 60 minutes or until done. If desired, occasionally baste with butter or glaze during the last hour.
Poussin
Tender, light-flavored Poussin are 26 to 28 day-old chickens that weigh about 16 ounces eash. Like all Eberly free-range, all natural chickens, Poussins are fed only the best grains and fresh water, and are raised without antibiotics or growth hormones. They're available frozen year round, and fresh by special order.
Cooking:
Poussins may be roasted or prepared with any method used to prepare fully grown chickens.
Stewing Hens
Stewing hens are fully mature laying hens that are 1 to 1 1/2 years old and weigh 5-7 lbs. when dressed. Their meat is firm, and has a strong chicken flavor. Stewing hens are best used for soups and broth, pot pies and excellent chicken salad. Stewing hens are available year round.
Cooking:
Stewing hens cannot be roasted. They must be boiled or cooked in a pressure cooker. Cook until meat is tender - approximately 3 hours.
