With this menu, you can grill using the lobster recipe below and make a luscious, strawberry white chocolate cheesecake to top off the meal. TIPS: For Outdoor Entertaining
After being cooped up all winter, everyone loves a party in the fresh
air and sunshine. Here are some tips for your outdoor celebration:
• An outdoor party offers many options. People can dine together at a table or in small groups around the deck or yard.
• Since the weather can be a question mark, consider renting a tent if your budget permits. This could protect your guests from an unexpected rain shower, or from the bright sun.
• If you are setting up a table outside, don’t set out the food until just
before it’s time to eat. And don’t leave any food, even nonperishables, sitting out for more than one hour.
TIPS: For the Perfect Grilled Lobster
Fill a large stock pot 2⁄3 of the way full with water; bring to a boil. Add a couple of live lobsters and bring back to a boil. Once boiling, cook for 2 to 3 minutes; remove from water and set aside until cool enough to handle. Once cool, flip lobsters on their backs and cut (shells only) in half lengthwise with a sharp knife or kitchen shears. Remove and discard intestines and gills and finish cutting them in half. Lightly crack the claws. Immediately place lobster halves, shell side down, on a grill on medium heat. To help retain moisture, lightly brush the meat with olive oil, melted butter or other marinade or sauce you desire. Cover the grill until the lobsters are cooked through (when the meat in the thickest part of the tail is no longer translucent); for two-pound lobsters, this should take from 7 to 9 minutes.
